Recipe: Rustic Italian Vegetable Bake

Continuing to crave healthy yet hearty dishes, Jess Rogers, of The Blonde Shallot, has graciously shared another delicious recipe with us for this month’s recipe feature. We are loving this Rustic Italian Vegetable Bake recipe; hearty enough for a main dish or perfect for pairing with a larger meal as a side. This dish is a great addition to weekly meals.

Recipe

Spice Blend:

  • 2 Tablespoon Granulated Garlic
  • 2 Tablespoon Granulated Onion
  • 2 Teaspoon Kosher Salt
  • 1 packet Good Seasons Italian Dressing Mix
  • 2 Tablespoon Herbs de Provence
  • 2 Tablespoon Fennel Seeds

Ingredients:

  • 2 zucchini, sliced in ½ inch rounds
  • 2 yellow squash, sliced in ½ inch rounds
  • 4 red bliss potatoes, scrubbed and sliced in ½ inch rounds
  • 1 jar roasted red peppers, roughly chopped
  • 2 tomatoes, diced and excess liquid drained
  • 1 can cannellini beans, drained and rinsed
  • 1 can Gluten Free Panko
  • Olive oil
  • Flat Leaf Parsley

Directions:

Mix all spice blend ingredients together thoroughly and set aside.

Coat potatoes with 2 tablespoons olive oil, 1 teaspoon kosher salt and a little freshly ground pepper. Lay out on a baking sheet (does not need to be single layer) and bake at 400 for 30 minutes till nicely browned. *does not need to develop a dark brown finish.

Set aside and allow potatoes to cool, this step can be done ahead of time.

Combine zucchini and squash in a large bowl. Drizzle with ¼ cup olive oil, and ½ cup of spice mixture. Mix well and massage the oil and spices into all slices to evenly coat everything. Add to the cooled potatoes, cannellini beans, roasted red peppers, and tomatoes, Mix gently with your hands.

Line 2 baking trays with foil. Spray foil, and dump half of mixture onto each tray and spread out evenly. Again, this does not need to be an even layer. Sprinkle half can of GF panko crumbs on each sheet, spray with cooking spray, and give it a light, even drizzle of olive oil.

Bake 400 for 30-35 minutes until panko is golden.

Garnish with chopped parsley or add freshly grated cheese for a little extra deliciousness.

Design: Pretty In Pink

With the abundance of beautiful materials out there we thought it would be fun to round up some unique products and design elements to help inspire the use of color, texture, and alternative options in everyday design.

This Triangolo Red Blend Mosaic from Artistic Tile mixes varied stones, cut in triangular shapes, to create a beautifully graphic mosaic. We love that the tile shines in this modern space that celebrates the hues of the stones.

Not ready to commit to color through permanent fixtures like tile or cabinetry? We encourage bringing in color and texture through soft furnishings and wallcoverings. From traditional to playful patterns incorporating color with fabric, wallcoverings, or rugs makes a big impact. Design Trends We Are Loving for 2022!

As we move into the New Year, we are looking toward more intentional design trends, from style to function these trends are steeped in celebrating personal style and comforts, stylishly. There were some trends and mindsets that we adapted into our design work in 2021 that we know will continue into the year, while others will fade to make room for new styles to shine. These are our favorite trends that we are loving for 2022!

Green with Envy

We know that it isn’t the color of the year, but we couldn’t be more happy to see that green is continuing to win the hearts of design clients and Mercantile customers alike. From deep rich greens to bright or muted hues we have loved incorporating this color that is universally associated with nature and growth.

Books

With minimalistic style and the ever growing digital world, books seem to have fallen out of fashion in recent years. We agree with trendwatchers that there is a resurgence in attraction to cultivate beautiful and interesting books to adorn coffee tables, home libraries, and offer inspiration.

White and Warm Woods

We are happy to see that, although white is still on trend for obvious reasons, a heavier exploration of colors integrated with this bright basic creating for more personality and warmth in homes. White is a classic neutral offering a light and brightness that is highly desirable, but can feel sterile if not balanced well. Woods in particular have been making a big come back in fresh hues for updated feels. As shown above in our #triplelfarmsproject kitchen a warm white creates a clean backdrop for a furniture style stained rustic alder island. We love this trend, there is a depth with a stained wood that you can’t get with a painted finish.

Eat Well: Jess’s Skinny Minnie Vegetable Soup

We had an overwhelming response to The Blonde Shallot’s Chicken Enchilada Verde recipe. We reached out to see if owner, Jess Rodgers, would share more goodness from her kitchen. In the spirit of our January focus on wellness and starting the year off right, she is sharing a healthy soup recipe that is sure to warm you up and have you feeling great from the inside out.

WHITE BAKERS, BRASS LADDLE, AND HANDMADE SOUP BOWLS AVAILABLE THROUGH T&C MERCANTILE

Skinny Minnie Vegetable Soup Ingredients

  • 4 carrots, sliced thin
  • 6 stalks celery, sliced thin
  • 2 yellow onions, diced
  • 4 cloves garlic, minced
  • 1 head broccoli, cut into small florets
  • 1 bag chopped kale
  • 2 cans diced tomatoes
  • 2 zucchini, diced
  • 2 cans cannellini beans
  • (4) 32oz containers Vegetable Broth
  • 2 teaspoon white wine vinegar
  • ½ bottle red or white wine
  • Salt & Pepper to Taste
  • 2 tsp. Italian Seasoning
  • Vegetable Broth

Directions

Bring a small pot of water to boil. Drop broccoli in boiling water and blanch for 3 minutes. Drain and rinse thoroughly with cold water. Set aside.

Warm ¼ cup olive oil over medium heat. Add carrot, celery and onion and sautee until crisp-tender. Add salt, pepper, Italian Seasoning, and stir well. Add zucchini and garlic, sauté for an additional 5 minutes. Deglaze with 2 cups wine, and stir up any pieces stuck to bottom of pan. Boil wine down for about 5 minutes. Add vegetable broth, cannellini beans, chopped tomatoes and white wine vinegar. Bring to a simmer, turn down to medium-low and let flavors meld for about 20 minutes.


Take pot off heat and add in kale, stirring well to make sure it all wilts down. Once kale is wilted down, add broccoli. Sample for seasoning and add salt & pepper as needed.

If you prefer a tangier flavor, add another teaspoon white wine vinegar. This is also lovely served with shaved parmesan on top.

Wellness: Establishing Healthy Practices

Making a New Year’s resolution to lose weight or exercise more is not a new concept. Chances are, we all have probably resolved to do this at some point or another. We also know that most of these resolutions can be short lived efforts. This year, instead of starting out focused on a specific diet or regiment, we want to focus on establishing healthy habits in an effort for a more attainable plan to last all year and beyond.

To begin on the right foot we sought some advise from a local pro, Dani Rubin, of Red Bank’s Pilates Blast. We asked her to share some of her favorite tips on establishing healthy practices that can be implemented by anyone and will fit into any routine or diet.

Dani’s Top Tips:

  1. Avoid eating anything from a bag, can or box.
  2. Workout with an accountability buddy to stay consistent.
  3. Focus on the health benefits of movement not the vanity benefits.
  4. Workout because you love your body not because you want to change it.

Welcome Warmly

As we quickly approach the “grand finale” of the Holiday Season, we are sharing some favorite ideas for preparing a warm welcome for your guests this holiday.

First Impressions

What is more welcoming than a beautifully adorned front entry? Simple or over the top, creating an entry that celebrates the season is the perfect way to welcome guests to your home. There are a few key elements that we love to incorporate to welcome guests warmly.

A festive wreath and greens is a must. We chose to keep things au naturel with one of our Eucalyptus wreaths, created during our Seasonal Wreath Workshop Event in November, for the front door.

A bench for guests to set down their belongings as they enter or sit down to take off their shoes is always a nice addition to an entry. We grouped a rustic live edge bench with a potted tree trimmed with a blend of dried fruits for an organic look, matching the entry wreath.

Lanterns are always a classic look. Whether indoors or out, lanterns can house luminaries or seasonal décor, such as ornaments or large bells. We love the battery operated candles that can be placed on a timer for a no fuss cozy welcoming glow.

An entry rug is important all year round, but especially during heavy traffic times like the holidays. An outdoor rug helps keep messy weather from entering your home while one in the foyer provides a cozy feeling as soon as guests enter.

With these few staple items, the possibilities are endless for adapting your look to be rustic, modern, or vintage to suite your holiday style.

Cozy Quarters

If you are expecting guests who will be staying in your home during the holidays, a cozy, private place for them is essential for creating a comfortable experience. Most of these items can be done well before their arrival; a good cleaning of the room and make the bed with fresh sheets. Display a set of bath linens for each guest and extra blankets are key comfort items. We like to include a bit of holiday cheer in the room. A small tree, wreath, or seasonal greens in a vase are simple additions that will enhance the spirit of the season.

The day of arrival prep should be a breeze by just adding a few finishing touches. Place a carafe of water on the bedside table, light a scented candle, and set the lighting to help your guest settle in.

Set the Table

Meals are one of the highlights of any gathering. Earlier this month we shared what we have planned for our holiday table styling and advised on the importance of pre-planning your menu and styling ahead. Having a game plan ensures that you have all the ingredients, serving pieces, and décor ready to go.

Stock Up

Stocking up is important for all aspects during the holidays. We all think about amassing groceries for meals and gifts for loved ones, but there are a few other equally important places that need to be considered when preparing to host guests.

Guest Bathroom

One of the most thoughtful things you can do for your guests is make sure that anything they may need during their stay is well stocked. Essentials like toilet paper, q-tips, bath products and towels should be in clear view or easy to find. There is nothing worse than being a guest and having to search for a necessity. We have all forgotten items when traveling so it’s always nice to be prepared and have extra items like a toothbrush, toothpaste, pain relievers, razors, and fascial wipes on hand as well. Dress the guest bathroom with fresh hand and bath towels, a bit of seasonal décor, and a collection of hand soap and lotion near the sink.

Bar

Knowing your guests is a big part of stocking your bar for success. If you happen to know your guest’s beverage of choice be sure that you have everything on hand. Along with the the contents of the cocktail, make sure you have any tools needed to create them; including a shaker, blender, and proper barware for serving in.

If you have a regularly stocked bar, then you should be set for anything. If you aren’t sure what to have on hand for your guests, consider creating a festive signature cocktail for the gathering. This will keep things simple and festive. Fill in with staples like bottles of wine and your basic liquors (rum, bourbon, vodka, and tequila should cover most of your bases). Be sure to have some common accoutrements on hand will ensure you have something for anyone ; tonic water/club soda, limes, and cola to accommodate classic cocktails. . We also like to have something sweet on hand like a Baileys or Irish Cream. Served straight or add a splash to coffee for an after dinner treat with dessert or hanging out by the fire!

Always grab extra ice, double whatever you think you will need!

Regardless of whether you have guests stopping by for a drink or coming to stay for several days, it is well worth every effort you make to create a warm welcome. We hope you have a very Happy Holiday and are sending warm wishes for the New Year!

Holiday Table – Gather Beautifully

Ask any designer and we bet they would say they have a soft spot for holiday decorating. Whether you are a professional designer or just love to be surrounded by beauty, decorating for this time of year is the perfect way to catch the holiday spirit!

Once the tree is trimmed and the stockings are hung, it is time to for enjoy this magical time of year. For us, this season is best celebrated through giving and being surrounded by loved ones. One of the many ways to honor the spirit of the season are through gatherings and meals. This year’s holiday table is a modern classic, complete with rich greens, crisp linens, metals, and simple styling.

Start with a Vision

Setting a table is an important way to set the stage for the entire meal. Like in designing homes, we find that starting with a vision will help pull together the smaller details more naturally. For our fall table, we channeled earth tones and more rustic elements. When we envisioned our holiday gathering, we opted for a more polished and formal setting. We chose to stick with a traditional holiday color palette. Layers of green are offset with touches of rich crimson and a few pops of bold red. Adding elements of metal offer a welcome shine and allure to finish the look.

Ambiance is Everything

Ambiance is always important when designing a welcoming space. We wanted the table décor to be uncomplicated, yet stunningly classic. To create this look, we chose a natural garland and assorted candles. A visual display of the season’s true spirit we placed olive branches, symbolic of peace and friendship, in a simple glass vase for the centerpiece.

A mix of taper and pillar style candles adorn pewter candle sticks and fluted glass hurricanes presenting the perfect glow to the table.

The abundance of strung lights that seem to blanket everything this time of year offer a cozy luminosity. We love the idea of finding tasteful ways to incorporate this seasonal staple into the lighting for your meal. If your dining space will accommodate it, set up a tree decorated to align with the styling in your tablespace. If space is limited, consider using small planted or faux trees placed on a side table or clustered nearby.

Plan and Display Ahead

Plan your menu ahead and take time to consider how and where it will be displayed and served. Knowing how you are going to serve everything ahead of time makes for an easier execution when the time comes. This also means you can stay more present during the event, knowing that each course is ready to go.

Dessert does not have to wait until the end. Showcase sweet treats beautifully displayed, on a side table or buffet for a deliciously festive addition to the décor. Setting these goodies up early will give guests a tempting peak at what is to come.
